Pumpkin Patch

This is Elizabeth's 1st pumpkin patch experience. It was pretty fun! She wasn't crazy about the straw at first but she got used to it. She also needed a nap so she wasn't all that smiley. Oh well, she still looks cute! Enjoy!

Corn Salsa

This is a very customizable recipe. Really you can add anything. We start with corn, black beans, honey and Mojo marinade. I added Artichokes, red onions and chickpeas this time. Usually we add small red beans and green onions. 

Today I wanted a yummy salad for lunch so I grilled some chicken for me and Elizabeth and then put it all over some romaine. I needed some chips so I wouldn't crave carbs later so I added a couple to the plate. The recipe is below. Enjoy!

Corn Salsa
16 oz frozen corn, defrosted
3-4 green onions, chopped
15 oz can black beans, drained and rinsed
1/2 cup Mojo marinade
1 TBSP honey

Drain beans, slice onions and then combine all ingredient in a bowl. Let sit for 10 minutes or so. Eat with chips or over chicken or fish.
Add whatever you want to it and add a little more Mojo until you are satisfied. I usually add more Mojo anyway. Also, it is great if it sits over night so if you are having a party, this is a great dip to make ahead of time!

Elizabeth is working on standing. She's pulling herself up on anything she can reach.

Obviously, it's time to drop her mattress down.

She will stand and then realize she doesn't have her toy. You can see her thinking of how to get it.
