| Today I wanted a yummy salad for lunch so I grilled some chicken for me and Elizabeth and then put it all over some romaine. I needed some chips so I wouldn't crave carbs later so I added a couple to the plate. The recipe is below. Enjoy! |
Corn Salsa
16 oz frozen corn, defrosted
3-4 green onions, chopped
15 oz can black beans, drained and rinsed
1/2 cup Mojo marinade
1 TBSP honey
Drain beans, slice onions and then combine all ingredient in a bowl. Let sit for 10 minutes or so. Eat with chips or over chicken or fish.
Add whatever you want to it and add a little more Mojo until you are satisfied. I usually add more Mojo anyway. Also, it is great if it sits over night so if you are having a party, this is a great dip to make ahead of time!
