Rain and Cakes






It's a rainy day so what else is there to do but read and cook? I am reading Wuthering Heights and I am really enjoying it. I figure it's partially educational because I have never read it before and it's a classic so I don't feel guilty about reading it during the day.

I was watching TV while we were home on vacation and saw on one of the cooking shows, a cake being cooked in a crock pot. So I got to thinking, 'I bet I could do that!' I tried today and I have to say, it turned out pretty well! I don't have a crock pot in the hotel but I do have pans. I had to make the cake in two batches because it would rise too much and hit the pot's lid. On the show, it took 5 hours on low. It only took about and hour on 2. I just took a regular cake mix and made it up. I took a ring of foil and put it on the bottom of the pan so that the heat wouldn't cook the cake unevenly. I put paper towels on the top (not touching the cake) to catch and condensation from the pan lid. Viola!
I am very happy I know I can do this now because I have been craving cake (probably because that was one of the things I didn't think I would be able to cook) since June. I would buy the slices from Publix but it's so expensive! Anyway, I am very excited about the cake and felt the need to share my success with everyone!
